A graduate of the CIA, Avia brings a very interesting background to our team. (No, not that interesting! She is a graduate of the Culinary Institute of America at Hyde Park, NY and claims not to be a spy.)
She has been a butcher, a chef, a cooking school instructor, and a morning TV culinary personality. She has worked in New York City, Germany and the Pacific Northwest. Most recently, Avia has been managing Homage Vineyard, a family project near Calistoga, where she produces her own honey and raises egg laying hens, along with making wine and growing produce.
As a “forager,” she will plan, purchase, and deliver products from LMR to our Farmstead restaurant. At the same time, Avia will have the key role in seeking and establishing relationships with other high quality farms and ranches. One of her first tasks with us will be to help with beef slaughtering and packaging.
