1 ½ cups finely chopped onion
6 cloves finely chopped garlic
1 ¼ t salt
¾ cup cider vinegar
4 tbsp dark brown sugar
¼ cup dark molasses
4 dashes of Tabasco
4 dashes of Worcestershire
2 tsp dijon mustard
½ tsp cayenne pepper
16 oz ketchup
½ cup Jack Daniel's Old No. 7 Tennessee Whiskey
5 tbsp clarified butter
In medium saucepan with a touch of Napa Valley Select extra virgin olive oil, sweat onions and garlic (to very little color).
Add Jack Daniel's Tennessee Whiskey and reduce.
Add ketchup, dijon mustard, salt, Tabasco, Worcestershire, cayenne pepper and cook 2 minutes.
Add cider vinegar, brown sugar, and dark molasses and stir to combine.
Reduce heat to low and cook until the flavors are integrated (approx 15 - 20 minutes).
Add clarified butter slowly and combine until sauce has thickened.
Finish with a splash ( to taste! ) of Jack Daniel's Tennessee Whiskey.
Yield 1 quart.
