1lb LMR Grass-fed Beef Stir Fry Strips
1 large yellow onion, peeled and sliced
2 large bell peppers, stemmed, seeded and sliced lengthwise
Juice of 1 lime
2 tbsp Napa Valley Select Extra Virgin Olive Oil
2 cloves garlic, peeled, minced
½ tsp ground cumin
½ fresh jalapeno pepper, seeded, ribs removed, finely chopped
¼ cup chopped fresh cilantro
Mix together in a large bowl lime juice, Napa Valley Select Extra Virgin Olive Oil, garlic, cumin, jalapeno, and cilantro. Place beef in bowl and cover with marinade, let set for a minimum of 2 hours.
Heat in a pan on high, 1 tsp Napa Valley Select Extra Virgin Olive Oil . Add beef, sear each side for approximately 2 minutes to medium rare (do not overcook). Rest beef for at least 5 minutes.
Reduce heat to medium and add onions and peppers (add more olive oil if necessary). Cook until onions are translucent.
Serve immediately with warm flour tortillas and your family's favorite toppings: shredded cheese, variety of salsas, sour cream, guacamole, pickled jalapenos, kalamata olives, cumin scented crispy tortilla strips, or fresh lime.
