Rarely made from Cabernet Sauvignon grapes, this unique, distinctive grappa retains its varietal character, including the red fruit and black cherry characteristics of our mountain site. We serve grappa as a”digestivo,” to aid in digestion at the end of a meal, or in a “caffe corretto” which is grappa in espresso.
Our Cabernet Sauvignon grappa was made by using steam-jacketed small copper pots to heat our wine-laden pomance. The volatized alcohol and compounds released in the pots move to a handmade copper distillation tower where the "middles" are expertly selected under the watchful eye of seasoned distiller, Dave Smith, our partner at St. George Spirits.
The result is a clear, fragrant - and very clean - grappa that captures the true essence of the Cabernet Sauvingon grape.
